The Cellar
Our cellar is based on the ground floor (and cellars) of an old family house on Carrer Sant Isidre in Vilalba dels Arcs. Years ago my family made wine here for their own consumption: Two underground tiles tanks we found during rennovation of the cellar tell of its past.
We have been gradually rennovating the cellar since 1995, as our total production has gradually increased. We are now at the limit of what can be produced in such a small space.
The cellar is a combination of modern technology (stainless steel vats with temperature control) and a healthy respect for our winemaking tradition (we use a vertical press with wooden staves).
The grapes are picked by hand in 20kg cases, ensuring that the grapes arrive at the cellar in optimum condition.
During the vinification we try to interfere as little as possible in the natural processes, keeping invasive techniques like filtration to an absolute minimum and using just the first 60% of juice (for whites) or 70% (for reds) from the press.
Ageing takes places in two cellars, one directly beneath the vinification hall (for reds) and one where the white ferments in oak barrels (with temperature control as seen in the third photo on the right) and ages.
